The Japanese Art of Preparing a Pan Before You Cook
Before a single ingredient goes in, Japanese cooks do something most Western recipes skip entirely. It takes two minutes — and it changes everything about how the food turns out.
Watch a Japanese home cook or professional chef heat up an iron pan, and you'll notice they do something before the oil goes in: they put the pan on the burner and let it sit there, empty, for a minute or two. Nothing happens visually. No sizzle, no smoke, no action. Then — and only then — does the oil go in, followed immediately by the ingredients.
This is karanabe (空鍋), which translates literally as "empty pan." It's one of the foundational techniques of Japanese iron pan cooking, and once you understand why it works, you'll never skip it.

Why an empty pan matters
Iron, unlike aluminum or copper, heats unevenly when first placed on a burner. The area directly above the flame gets hot fast; the outer edges of the pan lag behind. If you add oil to a cold-or-partially-hot iron pan, you get an uneven cooking surface — food sticks in the hot spots, sits in the cool ones, and the result is inconsistent.
Karanabe solves this. By heating the pan empty, you give the iron time to equalize — for the heat to spread from the center outward, bringing the entire cooking surface to a uniform temperature. When you add oil to a fully heated, temperature-equalized pan, it shimmers immediately across the whole surface. The cooking environment is suddenly consistent in a way it wasn't before.
There's a second effect that's less often discussed: heating an empty iron pan slightly opens the microscopic pores in the metal's surface. When the oil goes in a moment later, it wicks into those pores. Instead of sitting on top of the iron, the oil bonds to it. This is what makes iron pans naturally non-stick — and karanabe is what activates it every time you cook.
How to do it
Place the dry pan on medium to medium-high heat
Start with a completely dry pan. Any residual moisture will steam and interfere with the process. If your pan was just washed, give it a moment on low heat first to drive off any moisture before turning the heat up.
Wait — about 1 to 2 minutes
The pan should feel intensely hot when held close to (not on) the surface. For a wok, you're looking for the first wisps of smoke from the metal itself. For a smaller iron pan, one minute on medium-high is usually sufficient.
Check with a few drops of water
Drop two or three beads of water into the pan. They should ball up immediately and skitter across the surface like ball bearings before evaporating — this is called the Leidenfrost effect, and it tells you the pan is at temperature.
Add oil, swirl, then begin cooking immediately
Add your oil to the heated pan. It should shimmer and spread almost instantly. Swirl to coat the surface, then add your ingredients. Don't let the oiled pan sit empty on the heat — add the food right away.
What changes when you do this
Cold or partially-heated iron has hot zones and cool zones. Food sticks to the hot spots, steams in the cool ones. Onions go translucent instead of golden. Meat steams instead of sears.
Uniform surface temperature means consistent cooking from the first ingredient. Oil bonds to the surface rather than pooling. Vegetables char properly. Meat gets the Maillard reaction — that brown crust — instead of steaming gray.
Karanabe and wok hei
Wok hei (鑊氣) is the smoky, slightly charred depth of flavor associated with good stir-fry — the reason restaurant stir-fry tastes different from home stir-fry even when the recipe is identical. It's a product of very high heat, very fast cooking, and a fully heated pan. Karanabe is the first step toward achieving it at home.
Without a properly pre-heated pan, the thermal mass of cold ingredients drops the cooking temperature too sharply and the pan can't recover quickly enough. The food steams in the moisture that comes off cold vegetables or meat. With a properly karanabe'd pan, the heat recovers fast enough that the steam flashes off instead of pooling — and you get color, char, and flavor development instead of soggy stir-fry.
In Japanese cooking, preparing the pan is considered part of the recipe — not a preamble to it. The temperature of the iron when the first ingredient lands determines what happens to every ingredient that follows. Karanabe is just taking that seriously.
Does this apply to nitrided iron pans?
Yes — with one important difference. Standard iron pans benefit greatly from karanabe partly because their rust-prone surfaces need the oil-in-the-pores bond to protect them as well as cook well. The cooking benefits of karanabe still apply fully: even heat distribution, oil bonding to the surface, food that releases rather than sticks. But there's more margin for error — if you forget one day, the pan isn't at risk the way an untreated iron pan would be. Karanabe becomes a performance choice rather than a maintenance requirement.

Dry the pan completely
A quick wipe, or 30 seconds on low heat if just washed.
Karanabe: heat empty on medium-high for 1–2 minutes
The pan should be intensely hot but not smoking heavily. Water droplets should ball and skitter.
Add oil and coat immediately
The oil should shimmer on contact. Swirl to cover the cooking surface.
Cook — don't delay
Add ingredients right away. An oiled pan sitting empty on high heat will smoke.
